Snails in casserole with zucchini, potatoes and «ouzo»



ΣΑΛΙΓΚΑΡΙΑ ΣΕ ΑΛΜΗΥλικά για 6-8 άτομα

1 κιλό σαλιγκάρια με κέλυφος

3-4 φύλλα

Ingredients for 6-8 people

1 kilo of snails with the shell

3–4 fresh bay leaves

1 kilo of small potatoes

1 kilo of zucchini

1 wine glass of olive oil

4 onions chopped in pieces

1 small glass of ouzo

1 kilo of peeled tomatoes chopped in pieces

½ bunch of mint and rosemary

Salt, pepper, sugar

1 glass of water, fresh oregano and ground pepper

 

Preparation

Rinse the snails thoroughly with plenty of cold water. Let them drain.

Boil the snails in hot water with the fresh bay leaves. Let them drain.

Peel the potatoes and cut the edges from the zucchini. Fry them slightly for 3–4 minutes. Brown gently the onions and the snails in olive oil. Stir and add the ouzo, the tomatoes, the potatoes, the zucchini, the mint, the rosemary, the sugar, salt and pepper. Add little by little the glass of water and cook until the food is done and the sauce is thick. Sprinkle with fresh oregano and ground pepper and serve hot.
