Brousketa with tomato and basil
6 or 7 ripe tomatoes
2 cloves of garlic
1 tablespoon of olive oil
1 teaspoon of balsamic vinegar
6-8 fresh basil leaves, chopped
Salt and freshly ground black pepper
1 baguette of French bread or similar Italian bread
Peel and chop the tomatoes into small pieces. Preheat the oven. Meanwhile, put the tomatoes, garlic, 1 tablespoon of olive oil and vinegar in a bowl and mix. Add the chopped basil, salt and pepper. Cut the baguette into diagonal slices.
Spread over the oil and place in oven. Put the bread in a bowl, add the mixture and serve. We can add cottage cheese.
