Mom’s insistence to eat lentils is accepted by all dietetics who urge us to consume legumes 1-2 times a week.
Legumes are one of the main food categories of the Mediterranean diet and throughout the history of humanity their primary role was to cover basic needs in energy and protein.
Although there are over 15,000 species of legumes, few can be part of our diet.
Legumes (beans, lentils, chickpeas), have no fat, have antioxidant activity and are rich in complex carbohydrates.
Since legumes have high content of fiber, they are often more digestible. For this reason, do not forget to soak them in water. With inflation softens their skin and they become more digestible.
