Fava ‘married’



1/2 kg fava beans

2 onions

½ cup of olive oil


For the sauce ‘married’

½ cup of olive oil

2 onions, cut into rings

2 tomatoes

½ teaspoon cinnamon

1 bay leaf

Salt and pepper



In a saucepan boil the fava beans with enough water adding 1 whole onion.

Once it starts to boil lower the heat and skim

When it becomes creamy remove from heat, pour a little more than half of the olive oil, season with salt and use the mill to make puree.

In a pan heat the oil and add the onion slices. Saute over medium heat.

Add the crushed tomatoes in grater, cinnamon, bay leaf, salt and pepper and cook for 5 minutes.

Allow the sauce to cool and pour over the sauce.
