Giant beans in the oven
500 gr giant beans
½ cup of olive oil
1 green pepper
2 cloves of garlic
3 bay leaves
Salt – freshly ground pepper
Since last evening soak the beans in plenty of water.
The following day boil them until they soften.
Drain them, keep a cup of the broth and put them in a pan.
Finely chop the onion, garlic and pepper and place in a saucepan with the bay leaves. Finely chop the tomatoes and add them to the pot along with salt and pepper and let it boil until the sauce thickens.
Remove from heat, remove bay leaves, pour the sauce over the beans, add the oil and the broth in which we boiled the beans and mix well.
Bake for about half an hour on high heat.
