Chicken with okra



1kg chicken breast cut into pieces

½ kg fresh or frozen okra

2 cloves of garlic

6 tablespoons of tomato paste

Cayenne pepper

1 glass of red wine

4 tablespoons of olive oil

1 tablespoon of thyme




Sprinkle the chicken with cayenne pepper (attention it is very spicy) and salt. Saute in oil with garlic cut in slices. Deglaze with red wine and add the tomato paste (summertime is much better to add three to four fresh tomatoes) and thyme.

Boil for 30’ and then add the okra. Stir well and cook for about 20’ without stirring the food in order not to dissolve the okra.
