1 ½ kg big squid
2 cloves of garlic
1 green pepper
1 cup of rice
½ cup of olive oil
½ bunch of parsley
1 glass of ouzo
Salt / pepper
Clean and wash squid well.
In a pot, pour a glass of water and blanch the squid. Put them in a bowl with water and let them cool.
Chop all vegetables and the tentacles.
In the same pot, add the olive oil, tentacles, garlic, pepper and onion. When wilted, add the rice, stir for a minute and add the ouzo. Add the lemon juice, 4 cups of water, salt and pepper.
Boil over medium heat until the rice is ready. Let it cool.
Fill the squid. Close each squid with a toothpick and place in a baking dish one next to another.
Bake in the oven for 15 minutes approx., until they become golden.
